Hi everyone. I don't know about you, but it seems there is never enough time to do all the things that need to get done, let alone the things that I want to get done. I've thought long and hard about what Jaq Jaq Bird is all about, and in addition to making ordinary items beautiful and eco-friendly, I want to develop a community of smart and savvy moms who can support each other as we run our respective households efficiently, effectively, and creatively. I have a recipe tip for you today. A great week night meal should have a few ingredients, represent all the food groups, and dirty only 1 pot! Penne a la voila is a keeper:
1. Cook and drain 1 pound of penne (can substitute any short pasta, like macaroni, bow ties, rotini, etc.) and return pasta to pot.
2. To hot pasta, add ¾-1 cup extra virgin olive oil, ½ pound prosciutto (sub cooked ham, bacon or chicken) the zest of 1 good size lemon, 8 oz. of washed drained arugula (sub spinach) and 1 cup of grated Parmesan cheese
3. Stir it all up and salt and pepper to taste, then serve. Voila!
Even my finicky little guys love this dish despite the strong taste of the arugula, and once you get the hang of the combinations of ingredients, you can take this concept and substitute different components. The key ingredients to have in the pantry or fridge are the pasta, the olive oil, the lemon and the cheese. The protein and veggie component can be substituted with leftover protein and veggies. Enjoy!
